So, this weekend Jeremy was still he was in recovery with blisters and sore legs, so we hung out at home a lot and decided to make a dessert for our delicious hamburgers Sat. night.
With an extra brownie box in the cupboard, this is what I came up with. Amazingly delicious and super easy.
Kinda sad that 2 people could eat a whole 9x13 pan, but we did, all ourselves. It took us 2.5 days, and I'm pretty sure I ate most of it myself :(
Easy Cheesecake Brownies
1 pkg brownie mix (don't use the one's with syrup pouches)
8 oz cream cheese, softened
1 egg
1/3 cup sugar
1/2 t vanilla
Prepare the brownie mix as directed on package. Pour into greased 13x9 baking pan. Beat cream cheese with electric mixer on med. speed until smooth. Add sugar, mixing until blended. Add egg and vanilla; mix just until blended. Pour cream cheese mixture over brownie mixture; cut through batter with knife several times for marble effect. Bake at 350°F for 35 to 40 minutes or until cream cheese mixture is lightly browned. Cool; cut into squares.
Mmmm.
