Branching Out and Spinach


Broccoli has always been my favorite vegetable. When adding a vegetable to a meal, we usually just steam up some frozen broccoli. Lately though I've been wanting to branch out-not just with vegetables, but in general. I've been reading about all the foods out there and what nutrients they have in them and realized how small my circle is of foods I regularly eat.

It's not that I don't like eating them, I just usually buy the same foods because I know that I will eat them before they go bad.

This week though I succeeded in bringing home (and eating) a few new ones this week namely asparagus and lentils (also bought some oranges after awhile w/o them) and also reintroduced fresh spinach. I haven't gotten it in awhile but remembered how much I enjoyed spinach ("green") smoothies as well as all other things spinach.


Anyway while my twice a year trip to Costco (that's about all I need) I picked up a large bag of spinach.

I tried to document the bag, but it doesn't really show, but seriously, it was huge (2.5 lbs) , but it was only $5 and I figured at the grocery store that's not much more than a little bag right?


So this week I ate spinach every day. A couple smoothies, salads, spinach alfredo pizza (yum - I added garlic, chicken and tomatoes) and just recently had to figure out how to successfully freeze the other half or so of the bag to keep it from going bad. Hopefully if it will still taste good, not that I'll eat it fresh :)
So, if you ever have extra spinach on hand, try a green smoothie. A basic recipe is:

1 Cup Fresh Spinach
1 Ripe Banana
3/4 Cup pineapple (about half the can with no added sugar)
1 cup pineapple juice (I just drain it from the can)
1 cup of ice
Blend it all up in the blender!
I haven't yet had it with pineapple, but it's supposed to be good. Apple juice (which is what I used with any fruit I had) also works if you're low on Pineapple juice. I rarely measure, I just throw it in and it always tastes great. More spinach and it will be a little bitter. More banana and/or pineapple and it will be sweeter.

Do you look like Popeye yet? That sounds like a lot of spinach, I am impressed. I have a really good ham & spinach pasta recipe if you want it. That is basically the only time I eat spinach. I like how your post is title "branching out" cuz I always think of broccoli as little trees. Did you do that on purpose?

Haha, no I didn't think of that. That was a lucky one. Yeah, send me the recipe! I bought some ham thats in the freezer waiting to be used too so that'd be perfect!
